The paste moves to stainless steel cooking kettles where you add sugar, salt, vinegar, spices, and other ingredients according to your recipe. The kettles are jacketed for steam or electric heating. Agitators prevent burning and ensure even mixing. Cooking temperature and time are controlled by PLC.
After cooking, the finished sauce passes through a homogenizer for smooth texture. A deaerator removes air bubbles that could cause spoilage or poor sealing. Then the sauce is ready for packaging.
